Tuna Spaghetti

Quick and easy. Fish is good for you, ergo meal is good for you. Throw in some other veg if you fancy.
(serves 4)
300g spaghetti
4 red onions, sliced
1 tblspn olive oil
1 clove finely chopped garlic
6 ripe tomatoes, chopped
3 tbsp tomato purée
400g can tuna chunks in sunflower oil, drained
2 tblspns chopped flat-leaf parsley
- Add the spaghetti to a large pan of boiling water and boil for 11 minutes
- Fry the onion in the oil until brown and crispy
- Add the garlic and cook for another minute
- Add the chopped tomatoes and tomato purée and cook for a further 4-5 minutes
- Add the tuna chunks to the sauce, break up slightly and allow to heat through
- Drain the spaghetti and add to the sauce with the parsley, mixing well
