Tuna Spaghetti

Quick and easy. Fish is good for you, ergo meal is good for you. Throw in some other veg if you fancy.

(serves 4)

300g spaghetti

4 red onions, sliced

1 tblspn olive oil

1 clove finely chopped garlic

6 ripe tomatoes, chopped

3 tbsp tomato purée

400g can tuna chunks in sunflower oil, drained

2 tblspns chopped flat-leaf parsley

  1. Add the spaghetti to a large pan of boiling water and boil for 11 minutes
  2. Fry the onion in the oil until brown and crispy
  3. Add the garlic and cook for another minute
  4. Add the chopped tomatoes and tomato purée and cook for a further 4-5 minutes
  5. Add the tuna chunks to the sauce, break up slightly and allow to heat through
  6. Drain the spaghetti and add to the sauce with the parsley, mixing well
