Nothing too fancy here, but a great quick dish with about 2 of your “5 a day” in addition to some meat and beans for all you protein lovers out there. Does stain, of course. You might want to watch out for that… While I’m here, let me just recommend Frugal Feeding for all your tasty-yet-inexpensive feeding needs. And as an added bonus, the author is as prone to sesquipedalianism as I.

Vaguely Moroccan Mince

I got some mince and then didn’t know what to do with it. This is why one should stick to one’s shopping list when one doesn’t have a freezer. Searched BBC Good Food, came up with “moroccan spiced mince with couscous” then ignored the recipe and completely did my own thing. Mainly because the BBC recipe used Quorn. Which I don’t think should even be legal.
So, the following was the result of the spices and vegetables I happened to have around; play about with it! It’s actually quite tricky to make mince look incredibly appetising from a photography point of view; you’ll have to believe that it’s very yummy.
(serves about 4, depending on how many vegetables you add)

Gillian assures me that if one wants to call a dish “stew”, it requires to have potatoes cooked in it, rather than served boiled on the side (which would make the pot-dish a casserole) [I think that's the right way round]. And she’s from Northern Ireland, so she knows about her potatoes
. Anyway, this meets that definition. Rather sweet because of the apple juice and honey, but tasty (as long as you like apple juice and honey).
Marmalade-Glazed Sausages

After working in a butcher’s during my last year of high school, I think I’ve reason to be wary of sausages. But after checking the ingredients on the back of the higher-quality brand in Waitrose, it seems there are some that are made of more than fat and OFFAL. These taste goood, but be wary of adding more spice than specified, or else they can get quite spicy!

Gotta love the reduced section in Tesco’s for cheap meat that you can buy on a whim, pop in the freezer, and work out what on earth to do with later after a quick google and scour of what you’ve got in your cupboards. This recipe uses a ridiculous amount of dishes and looks ludicrously posh if you’re just making it for yourself (this recipe makes enough for 2, so you can half it if necessary), but tastes lovely
Paella

Just the ticket to make use of prawns which are often on the reduced pile at your local supermarket. Can be frozen after you’ve made it, just need to make sure you reheat the rice carefully. Takes a while to make as all rice-y risotto dishes do, but the taste makes it worth it! It’s the sort of recipe you can adapt, adding in different meats and spices depending on what you fancy.
