Chocolate Chip Muffins

An adaptation of the nestlé tollhouse cookies recipe – odd and not very traditionally muffin-tasting, but nice.

(makes 28)

515g plain flour

1½ tsp baking powder

230g butter, softened

200g granulated sugar

200g packed brown sugar

3 medium eggs

150g chocolate chips

3 tblspn cocoa powder

1 tsp vanilla essence

  1. Preheat oven to Gas Mark 5 / 190oC
  2. Mix flour, baking powder and cocoa powder in small bowl
  3. Beat butter, granulated sugar, and brown sugar in large mixer bowl until creamy
  4. Add eggs, one at a time, beating well after each addition
  5. Gradually beat in flour mixture, then stir in chocolate
  6. Drop into muffin tray with cases
  7. Bake for 10 minutes or until golden brown
  8. Cool for 5 minutes
