Treacle Cookies

The trick is to make these quite small, otherwise they become too gooey and fall apart.

(makes about 40)

350g white sugar

4 tbsp black treacle

300g flour

1 tsp bicarbonate of soda

1 dstspn ground ginger

1 egg (beaten)

115g butter

1 tsp ground cinnamon

1 tsp ground cloves

  1. Cream butter with sugar
  2. Stir in treacle, then all other ingredients
  3. At this point, you may want to put the dough in the fridge for about half an hour to make it easier to roll into balls
  4. Shape dough into inch-round balls (it’s better to have lots of small cookies than a gloopy mess of attempts at massive ones)
  5. Place 5cm apart on greased baking tray and press down slightly
  6. Bake at Gas Mark 4 / 180oC for 12 minutes
  7. Leave for a minute on the tray before removing to a wire rack to cool
