Triple Chocolate Chip Cookies

I doubt the quest for the perfect chocolate chip cookie will ever come to an end, but these are tasty, look nice, and are certainly make-again-able.

(makes 25 cookies)

130g butter
200g sugar
110g brown sugar
2 eggs
1 tsp vanilla
260g plain flour
8 tbsp cocoa powder
1 tsp bicarbonate of soda
150g dark chocolate chips
150g milk chocolate chips

  1. In large bowl, beat butter with granulated and brown sugars until fluffy. Beat in eggs, 1 at a time; beat in vanilla.
  2. In separate bowl, whisk together flour, cocoa, and bicarbonate of soda.
  3. Add to butter mixture, stirring to combine. Stir in milk and chocolate chips.
  4. Drop by heaped tablespoonfuls, about 2 inches (5 cm) apart, onto greased baking sheets. Bake at Gas Mark 4 / 180oC until firm to the touch and no longer glossy; about 12 minutes. Transfer to racks; let cool completely.
