Scones

Quintessential afternoon tea fare. Serve hot with butter, jam, or clotted cream. Whether you pronounce the word properly, or as scoahns.

(Makes 8-10)

225g self-raising flour

2 tsp baking powder

55g butter, cut up

60g sugar

140ml milk + extra to brush

  1. Mix the flour and baking powder
  2. Rub in the butter until it has the consistency of fine breadcrumbs
  3. Stir in the sugar and then the milk
  4. Knead the resultant dough lightly on a floured surface and roll out so it’s about an inch thick
  5. Cut out with a 5cm fluted cutter and place on a lightly greased baking tray.
  6. Brush with milk, and bake for 10-15 minutes at Gas Mark 7 / 220oC until well-risen and golden
  7. Cool on wire racks and serve with butter and jam.

    1. Just because most people think something, does not make it right 😉 Though out of curiosity, a Mancunian lad at work pronounces “Nice” biscuits as the French city rather than as the adjective… an English thing?

  2. you might find they rise straight up instead of sloping if you perhaps roll them a little thinner and don’t twist the cutter at all, just in and out. that way the layers and stuff aren’t all stuck together.
