Apple Cake

If life throws you apples… make apple cake! Fed up of apple crumble all the time and had a few eggs to spare, so thought I’d try this recipe, adding some cinnamon and mixed spice to give it a little extra oomph. Tastes best just out of the oven, though can be eaten cold and/or heated up in the microwave. Lovely with a bit of double cream.

There's apples so that makes it... healthy?


(serves 6)

3 large apples

120g plain flour

120g caster sugar

2 tsp baking powder

2 eggs

120g butter, melted

2 tsp cinnamon

2 tsp mixed spice

  1. Peel, core and dice apples.
  2. Sift the flour, sugar and baking powder together and beat in the eggs.
  3. Beat in the melted butter, then stir in the apple.
  4. Butter a cake tin well, pour in the batter and cook in a 180oC oven for around 35mins.
