Chocolate Chunk Cookies

I have a feeling the cupcake maker really didn’t do these cookies justice (giving them quite a cakey consistency), but the people who’ve tried them have liked them, so that’s recommendation enough for me to post the recipe in turn. It’s going to be so weird having access to a proper oven again and turning out cookies that don’t look identically small and cupcake-shaped!

225g butter
150g / 3/4 c sugar
150g / 3/4 c brown sugar
1/2 tsp vanilla
2 large eggs
1/4 tsp salt
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
350g / 2 1/2 c plain flour
150g chocolate chips

  1. Beat the butter until it is creamy
  2. Beat in the sugars and cream for 2 minutes
  3. Lightly beat in the eggs and vanilla until just incorporated
  4. Stir in the salt, bicarbonate of soda, and baking powder
  5. Gradually add in the flour until it’s incorporated
  6. Stir in the chocolate
  7. Drop spoonfulls onto a plate and refrigerate for a few hours
  8. Bake at 170oC for about 15 minutes
