Peach and Onion Pasta

Some have called it crazy. Some have called it disgusting. Personally, I call it “Spanish inspired”.

You may have heard of or tasted peaches in conjunction with chicken before; this is merely the vegetarianised version, without fouling up the plate with quorn or tofu.

Now, I’m by no means suggesting you serve this up at a dinner party, but if you want something tasty in a hurry that’s not the same old tomato or cheese-based sauce, then this is worth considering. Especially if you’ve got some peaches lying around to be used up.

(serves 2)

1 red onion, diced

2 peaches, peeled and sliced, or a tin of peaches in juice or syrup

Optional: slosh of cream or milk

Optional: 1/2 tsp of sugar

  1. Soften the onion in a little oil. Add a pinch of pepper after a few minutes.
  2. Add the peaches and stir about.
  3. Pour in the liquid from the tinned peaches or else a little water (you could use the water from the pasta which you should be boiling at the same time), and sugar if you want. And the cream/milk.
  4. Enjoy with some pasta or rice.
