Pea Soup

I was surprised to find that I hadn’t blogged about this before, as it’s always been one of my favourite soups. It’s really easy to make, and as a bonus is very “store-cupboard” with ingredients that you will be likely to have lying around anyway. Plus, it doesn’t take long to make! I love its vibrant colour; it goes perfectly with some crusty bread or an onion-bagel, as indeed most soups do. Freezes / reheats just fine.

(serves 4; can be doubled)

1.5 tbsp (25g) butter

1 large onion, chopped

4.5 tbsp (50g) plain flour

900ml vegetable stock (or chicken, especially if you want to make your own stock)

450g frozen peas

Salt and pepper

  1. Melt butter and cook onion until soft
  2. Stir in flour and cook for 1 minute
  3. Gradually add stock stirring continuously
  4. Bring to the boil; add peas and seasoning
  5. Cover and simmer for 15 minutes
  6. Liquidise
  7. Return to pot and heat through
