Maybe not the most enticing of titles but when you’re looking for a quick pudding fix after dinner and don’t want to waste money/energy using the oven just for one dessert, the microwave cake seems to promise it all. Yet, sadly, so many are so very lacking. I thought I’d try this one based on its odd ingredients and was happy when it turned out to be pretty tasty, especially with some ice-cream.
1 tbsp plain flour
1 tbsp cocoa powder
1 tbsp sugar
1/8 tsp bicarbonate of soda
Sprinkle of sea salt
1/4 t vanilla (optional)
1 tbsp plain yoghurt
2-4 tsp milk
1-2 squares of chocolate, chopped up
- Butter a ramekin or mug
- Stir the dry ingredients together in a bowl; add the vanilla and the yoghurt and mix to combine, then add enough milk so that it’s nice and smooth.
- Add the chocolate chips.
- Spoon into the buttered receptacle and microwave for 60-70 seconds.
- Turn out (or just leave in the mug – careful; it’ll be really hot!) and enjoy alone or with cream/ice-cream.
