Sorry for the radio silence – turns out helping cook for 80 at a phone-signal-less camp for a week is not conducive to blogging; who’d’a thunk?! Here’s a quick and easy dessert that tastes very yummy.
(serves 2- but you can easily scale it up or down!)
2 apples, peeled, cored and cut into eighths
1 tin of peach slices in syrup (or peel and cut two ‘real peaches’)
3 tbsp dark brown sugar
1 tsp ground cinnamon
1 tsp mixed spice
2 tbsp water
- Toss all of the ingredients together. Add some of the syrup from the tinned peaches if you want
- Heat a large heavy bottomed skillet/frying pan over medium high heat. Add the mixture, spreading it out into one layer as much as you can. Let them start to caramelize and turn golden on one side, before you flip them over and do the same on the other side, removing them as they become caramelized on both sides.
- Serve with a dollop of yoghurt or ice-cream.
