Key Lime Pie

A really simple, but really tasty dessert. And very much better than KitKats and their links to evil organisations…

You maybe don’t need quite so many limes, but all 7 will give it a very tasty, limey taste.

(the above photo is of a scaled-down version I used to test the recipe – the full thing makes enough to serve 12-16 people, depending on how hungry you are!)

375g digestive biscuits or ginger nuts, crushed
150g unsalted butter
grated zest and juice of 7 limes
570ml double cream
1 x 397g can sweetened condensed milk

  1. Melt the butter and stir in the crushed biscuits
  2. Lightly press into the base of a 23cm/9in deep loosed-bottomed fluted flan tin. Chill whilst preparing the filling.
  3. To prepare the filling: place the lime juice into a large bowl, add the cream and condensed milk. Whisk for 1-2 minutes. Add the lime zest and lightly stir. Pour onto the prepared biscuit base.
  4. Chill in the fridge for 1-2 hours.

To decorate: melt a little chocolate (say 50g) with a little cream (say 1 tbsp) and drizzle on the top.
