onion and carrot bhajis

Nice side, starter, or way to use up carrots when you only wanted 1 but Lidl refuses to sell anything other than a kilo at a time…

(makes 10-12)

4 carrots, coarsely grated
1 red onion, finely sliced
2 cloves garlic, minced
1 tsp cumin
1 tsp ground coriander
1/2 tsp garam masala
1/2 tsp turmeric
1/2 tsp chilli flakes
1 tsp salt
5 tbsp gram flour
2 limes, juice and zest
sunflower oil for frying

  1. Combine the vegetables and stir in the spices and salt, then the gram flour and lime zest.
  2. Heat the oil in a large wok.
  3. Add the lime juice and enough water to the carrot mixture to create a light, but not watery batter.
  4. Drop bhajis by dessert spoon into the wok once the oil is sizzling. Fry 3-4 at a time, draining in a kitchen-roll lined bowl before serving.
