Because cultural appropriation is what I love to do on this blog, today I’m turning to our Scandinavian neighbours after a Swedish friend from Glasgow shared this recipe on her blog last summer. Very easy, very tasty.
100g butter (use the real stuff, taken out of the fridge a few hours before)
3 tbsp cocoa powder
3 tbsp cold coffee
- Using hands or hand blender, combine all ingredients except the coconut.
- Once there are no more lumps of butter in the dough, let it cool in fridge 10-30 minutes.
- Roll the dough into balls of any size, then roll them in the coconut before enjoying them during a well deserved “fika break”.
