Does anyone actually like green peppers? Well, here’s a recipe that calls for them, so you can finally put that 3rd-of-the-3-pack to good use.
(serves 4 as main or more as side)
3 medium sweet potatoes, chopped
1 green pepper, chopped
1 chilli pepper, minced
Handful cherry tomatoes, halved
1 small red onion / bunch spring onions, minced
3 gloves garlic, minced
Handful fresh coriander, chopped
1 tbsp cumin
1 tbsp chilli powder
2 tbsp orange juice
1 tbsp olive oil
- Add sweet potatoes to a pot of boiling water, and simmer for 15-20 minutes. Drain and return to pot.
- Add the other vegetables, spices, and coriander to the bowl, and mix.
- Make dressing: whip orange juice, olive oil, and juice from the lime.
- Stir everything together and chill in fridge.
