(serves 4 as main or more as side)

3 medium sweet potatoes, chopped
1 green pepper, chopped
1 chilli pepper, minced
Handful cherry tomatoes, halved
1 small red onion / bunch spring onions, minced
3 gloves garlic, minced
Handful fresh coriander, chopped
1 tbsp cumin
1 tbsp chilli powder
2 tbsp orange juice
1 tbsp olive oil
1 lime

  1. Add sweet potatoes to a pot of boiling water, and simmer for 15-20 minutes. Drain and return to pot.
  2. Add the other vegetables, spices, and coriander to the bowl, and mix.
  3. Make dressing: whip orange juice, olive oil, and juice from the lime.
  4. Stir everything together and chill in fridge.
