curried honey-aubergines

A delicious way of using up aubergines, this side dish makes a wonderful addition to a mixed salad or tapas spread. I first discovered this at the house of my extended aupair family and have made it several times since, sometimes switching up with chilli rather than curry.

2-3 aubergines
3 tbsp honey
1 tsp curry powder (or 2 chillis, diced)
4 tbsp olive oil
2 cloves garlic, minced
Juice of 1 lemon

  1. Cut aubergines lengthwise (bear in mind they will shrink a lot)
  2. Place in ovenproof dish, season, and then stir in the rest of the ingredients
  3. Bake 10 minutes at 180oC then stir and bake at 150oC until aubergines are soft (40-60 minutes)
