leek and potato soup

(serves 25)

75ml vegetable oil
1kg onions
1.5kg (10ish) leeks
1.5kg potatoes
7 veg stock cubes in 7 litres of water in box
600ml double cream
200ml milk
Salt and pepper

  1. Heat oil, add onions, potatoes and leeks. Cook for a few minutes until starting to soften
  2. Add the stock and bring to the boil. Season and simmer until veg is tender
  3. Blend, add double cream and milk, and serve with bread
