sticky toffee pudding

SO TASTY! Serves 150 people (allow for seconds!)

4kg raisins / chopped dates
8.8l boiling water
20 tsp bicarbonate of soda
20 tsp vanilla
1kg margarine
4kg self-raising flour
4kg soft brown sugar
24 eggs

  1. Mix together raisins, bicarb, vanilla & boiling water, stand for at least 1 hour.
  2. Rub together margarine & flour then add sugar & eggs.
  3. Mix this with raisin mixture [it will be gloopy – that is fine] and bake for about 45-70 mins at 170-180C / GM3-4

sauce

4.8l double cream
2kg soft brown sugar
1.6kg butter (get real butter for this)

  • Melt butter sugar & cream together & bring to boil; pour over pudding once it is served
